OUR CATTLE
What breed of cattle do you raise?

American Wagyu. We use top quality registered Wagyu bulls and high-quality nonregistered Wagyu cows as part of our operation. We have a few cows from our original cow herd: Brangus/Herford and Angus cows. The high end Wagyu cattle are not part of our operation, and we don’t profess to sell you the top end of Wagyu Beef as it is cost prohibitive to most people. What we do sell is a high quality locally raised beef with a dominate Wagyu influence through our breeding program. The feeding and finishing is key in our mind of great quality eating beef and that along with the Wagyu breeding is what we sell. To date we have not had one dissatisfied customer.

BEEF ORDERING
How much will my beef cost?

$15.00 per pound for Vacuum Sealed meat (processing included).
$6.00 per pound at Hanging Weight (you pay processing).
$4.00 per pound at Live Weight at our farm (you pay processing).
We can sell a half beef carcass at hanging weight or live animal if you want to custom cut to your standards.

Can I come to the ranch to buy beef?

No. We don’t handle transactions directly at our farm, but you’re welcome to schedule a time with us to visit/tour the farm. Please ensure you make a reservation in advance before visiting.

How far in advance should I place my Beef order?

We start processing in October and continue through March. We have approximately two animals per month available starting in November. You should place your order starting in June so we can schedule deliveries. We have a list of customers and orders will be on a first come first serve basis.

Do we get to keep the organ meat and other products from our animal?

We sell our processed beef without these other products. However, you can request organ meat, bone, fat, etc. at a reduced price. Visit our Miscellaneous Cuts page for more details or contact us directly.

Can I customize an order?

Only if you buy a half carcass at hanging weight price or full live animal price and pay the processing fee yourself.

Is jerky, summer sausage, and beef sticks provided?

No. Only if you buy a half carcass or full live animal and pay the processing fee yourself.

Can I split Standard Beef Share with family or friends?

We primarily sell beef in minimum quantities of one-quarter sections. Once delivered, you have the flexibility to divide it as you prefer.

Do you offer samples of your beef?

NO.

Can organ meat be mixed with hamburger?

Not currently.

What is your refund policy?

If you cancel your order, you forfeit your deposit.

How do I pay for my beef?

Once your meat is processed, we’ll contact you to arrange the final payment. You can then pick it up at Carter’s, our meat storage facility, or opt for delivery. We do not ship currently. 

GENERAL BEEF INFORMATION
How lean is your beef?

Our meat will grade Prime or Prime Plus. Our hamburger is 80/20 meat-to-fat ratio. If you want lean meat you need to buy something other than Wagyu as their meat is known for its fat content and fat distribution in the meat. It is exceedingly difficult to get extra lean hamburger meat with Wagyu.

What is dry aged beef?

It is meat aged in a controlled open-air environment (low temperature) for a period (weeks to months) to improve flavor, texture, and tenderness. Our beef has a minimum 21 days hang time.

How much freezer space do I need?

See the ‘Shop Wagyu Beef’ page for average cubic feet for a Quarter Beef. It may depend on your freezer type (chest vs upright) and your ability to stack and store it efficiently.

How long can you store frozen beef in a freezer?
We believe Carter’s Custom Cuts vacuum seal is superior to most we have seen. We personally have used frozen beef for 2-3 years with little loss of quality. It all has to do with keeping it frozen below 0 degrees F° temperature. We keep all of our meat in separate freezers with a temperature monitor to prevent loss. Check with your local Cooperative Extension Office.
HERD & ANIMAL HEALTH
What is your herd's overal health?

We pride ourselves on our herd and animal health. Our place is isolated from most cattle thus they are almost quarantined. Our climate is conducive to good health if care is taken. Cattle are seen each day by somebody. We weigh feeder cattle about every two months to keep up with weight gain and get a close look at the animals. We do use some vaccines to prevent high death loss.

What vaccines do your cattle receive?

As a preventative, we vaccinate calves with a pinkeye and black leg vaccine and a vitamin at initial working of calves. At weaning we vaccinate for BRD (Bovine Respiratory Disease) or pneumonia using a nasal vaccine and a vitamin. All cattle are wormed quarterly and sprayed for flies as needed. We provide salt and mineral free choice and some protein supplements during dry times.

Do you use antibiotics?

Yes, at the onset of sickness or injury of an animal we administer antibiotics to prevent death.

Do you use growth hormones?

NO.

Have your cattle received any of the Covid-19 vaccines?

NO.

CATTLE FEEDING REGIME
What do your cattle eat?

Our cows graze on pasture (native and/or nonnative Bermuda irrigated pasture) while raising their calves and are fed free choice Sudan hay during winter along with dormant pasture and some protein supplement as needed.

How is your beef finished?

Once weaned, calves go into our feed yard and are fed a free choice mix of Sudan, wheat and alfalfa hay that is processed with a mix wagon for better digestibility for 12-14 months. Our target is 1 to 1.75 pounds per day during finishing. We use a 12 to 14 percent protein diet for slow finishing with a target processing age of 28-32 months. Wagyu are a slower finishing animal. Building their frame for the first 20 months then marbling the last few months. They finish slower than other cattle breeds.

Do you use grain to finish cattle?

During final finishing, feeders are fed the same hay mix along with a ration ground wheat, brewer mash and/or commercial feed the last 4-6 months.

ANIMAL PROCESSING
Where is your beef processed?

Our beef is currently only processed at Carter’s Custom Cuts in Thatcher, Arizona. Scheduling processing is difficult and we MUST schedule as early as six to eight months in advance.

How is your beef inspected?

Carter’s Custom Cuts is an Arizona Department of Agriculture inspected facility. Other processors may be USDA. Both State Inspections and USDA beef inspection use the same federal meat inspection standards. The main difference between the two is market access.

How is your beef packaged?

Our beef is all vacuum sealed for extended freezer life.

What is the cost of processing?

Processing cost is incorporated into the price of our Vacuumed Sealed beef. If you choose other options, Carter’s Custom Cuts currently charges $1.72 per pound at Hanging Weight for Vacuum Sealed orders, plus other charges.

What is the average yield (total weight) of beef from a steer?

Visit our Shop Wagyu Beef page and under ‘What You Get’ you can find that information. That link provides a list of cuts, average number of cuts, and average pounds per quarter. This does not include any trimmed fat, bone, or organ meat as it is sold separately (aka Miscellaneous Cuts).
We have worked with Carter’s Custom Cuts to develop a Cut Sheet that gives people an optimum number of steaks, roast, and hamburgers, which has become our standard beef package. We package in three-to-four-pound roasts; two three quarter inch steaks per package and one pound hamburger chubs. If you want to serve more, you just thaw more!
